This is one of those super comforting recipes you’ll go back to over and over again. I’m sorry – I can’t say it’s healthy, or low fat, but seriously, who cares with flavour like this?! However, it is super easy, and quick, and have you coming back for more!
Recipe for 2 people:
Ingredients:
- 2 salmon fillets
- 2 tbsp salted butter
- 1 onion, finely chopped
- 6 cloves garlic, crushed
- 1 fresh tomato, chopped
- 350 ml single cream (creme fraiche would make it a little lighter, if desired)
- 100g Parmesan
- 2 handfuls spinach
- Salt and pepper, to taste
- 1 tbsp olive oil
- Chopped fresh parsley to garnish (optional)
- Desired sides (i.e. roast veg, rice or pasta)
Method:
- Season salmon fillets with salt and pepper and pan fry 5 min each side in olive oil, set aside.
- In same pan melt butter and fry onion, garlic and tomato, add cream and simmer gently.
- Add Parmesan and melt into sauce followed by spinach, cook until wilted. Add salt and pepper to taste.
- Add back salmon to the pan and sprinkle with chopped parsley. Serve with roast veg, rice, pasta or even salad.
